This is salad my mom start to make regularly the last few months and I liked it so much. But I never mad it myself, because I prefer cooked vegetables over fresh one, even the latter is what makes the skin radiant and really boost your energy and your mood! So I just thought why wouldn’t I share the recipe with YOU my reader? I bet you will love it as much as I do!
However my recipes of fresh salads are increasing, I start to like the raw taste, it feels like its awakening you, rather than makes you feel comfort. And you know its summer, we want to be more alert and have fun!

It’s leafy dark green vegetable and very healthy plant. It may not used as much as food ingredient in the western world but a garnish, here in the middle east, we eat it a lot. and I thought it’s necessary to spot light on it.
It has so many health benefits, let’s mention a few:
- It’s a very low calorie food, but has high amounts of vitamins and minerals. its has Vitamin K , folat , vitamin C and A, and they are vital vitamins for the body to function. Also, has good amounts of magnesium , potassium , and calcium.
- It has nitrates that lower blood pressure, but that in case of high intake not moderate one.

- It has an antioxidant called alpha lipoic which it lowers glucose level, and increase insulin sensitivity.
Apples
IÂ love fresh apples whether, they are green yellow or red. I prefer them fresh like this salad. However, I cooked them once with beef, and they were fantastic, check out the recipe here.Â
This is such an easy salad, chop the vegetables or slice them, then toss them together! Use a sharp apples like granny smith. You can add feta cheese if you are not vegan , it’s such a good edition , however I prefer my salad to be less salty.

Ingredients
- 1 medium roma tomato chopped
- 1 medium cucumber chopped
- 1 green bell pepper chopped
- 1 green apple sliced
- 1 small carrots chopped
- Few cilantro leaves.
- 1 cup of watercress
- 10 pieces of walnut
- Juice of half lemon
- Olive oil for drizzling
- A pinch of salt
Instructions
- assemble all the chopped vegetables together
- Add all ingredients in a big bowl .
- Add lemon juice, salt, and olive oil.
- Serve right away or keep in the refrigerator for couple of days.
