This comfort vegetarian cheesy baked oatmeal is so easy to make. It’s good for a lazy Sunday morning or even for a great end to any weekday! This dish is high in protein and fibers! Moreover, gluten free and vegan friendly!

I had made this cheesy baked oatmeal a lot in the past. However, I reduced my cheese and milk intake drastically over the last year. But lately, I wanted to post an easy recipe that doesn’t need a special ingredient or any high skill level in the kitchen. A recipe that anyone can make, a comforting one, a really good one!
Another reason, is I’m experimenting a lot in baking, especially gluten free baking and vegan baking. I really thought I knewa my way around gluten free flour, but no, this is far from right. Using different gluten free flours in different baked products yield different outcome, and every change counts, so after all this, I really needed a break.
I chose an easy dish that I’m craving for a while now, and well it’s gluten free! You can add whatever cheese you want, but this recipe is about simplicity. So, I picked cheeses that anyone can get.
It’ really funny that in life you keep searching for what you want to be or master. My kids is keep asking me about it in a dialogue that goes like this :
My son: Mom, what do you want to be when you grow up?
Me: Dear, I’m a grown up already, and I’m a baker!
My son: Did you want to be that when you were kid?
Me: No, dear, I wasn’t really into it .
Actually, it never occurred to me, that I would do baking, well, not for profession now, but soon, maybe in a year or two. I hope I’ll stick to it with all it’s difficulties and obstacles that you have to face!
So enough blah , blah about my life, here is the cheesy baked oatmeal recipe, you can add the vegetables or leave it out. But it’s a very nice addition, to the texture and flavors.
Oatmeal
Oatmeal is a crop that mainly used as feed for livestock. However, it’s edible for humans too. it’s very healthy . My love for oatmeal started, when I needed badly to loose weight, and be fit. That was four years ago, when I had a very high cholesterol level. I had oatmeal almost everyday, with milk, and raisins, and it did help me a lot.
Why do you need to add oatmeal to your diet?
Here are some of the healthy benefits:
- It’s naturally gluten free whole grain, and it can reduce cholesterol, blood pressure.
- It’s high in fibers, and has minerals like magnesium, manganese, and iron. Also in B vitamins like folate , and B1.
- You can add it to almost everything you can imagine. Plus it’s versatile, and airy, but makes you feel full. In this study they compared the effect of oatmeal, and cereals on satiety, and find improve satiety more than cereals.
Oat is naturally gluten free cereal. However, there is a high possibility of cross contamination, since it’s manufactured in facilities that deal with wheat. So if you suffer from celiac disease, choose oatmeal that is certified gluten free.
You can also make this vegan, by using plant based milk and vegan cheese. Enjoy it!

Cheesy Baked Oatmeal with Vegetables
Ingredients
- Ingredients for one bowl:
- 60g Rolled oats
- 30g mozzarella cheese (grated)
- 30g cheddar cheese (grated)
- 120 ml milk
- 1/2 tsp of garlic powder
- 1/2 tsp of onion powder
- salt and black pepper
- 3 small cherry tomatoes cut in halves
- 3 small mushrooms buttons
- 1 small zucchini diced in small discs ( I've used the white ones)
- Optional:
- A drizzle of balsamic vinegar or any dressing you like , a pinch of Cajun spice
Instructions
- Preheat the oven at 185 C , 365 F
- In the bowl,add milk, spice and grated cheeses
- line the baking dish, add oatmeal, line vegetables as you desire, you can make it layers between oatmeal or just i did.
- Pour milk mix, and put in the oven for 15-20 minutes.
- Remove from the oven , let it stand for 5 minutes, then you can serve it along with juice, coffee, or salad on the side.
- Refrigerate leftovers up to 1 week, heat before serving in the microwave for 1 minutes or in the oven for few minutes.
