This mousse idea was simply to save food from going to waste. I had an opened cartoon of cashew cream, and some ripe bananas. I made paleo banana bread recently with ripe bananas, and also banana cream that I posted on Instagram stories. And I like to make different recipes , So I was thinking what to do. We eat banana often, but sometimes and due to hot weather here, banana got ripened quickly . I don’t want to throw away these brown bananas. So I thought, a sweet mousse will solve this dilemma.
Since banana is sweet already, I thought of adding a natural sweetener that not too sweet and helps with texture of mousse. Hence, I used dates. it helps with a creamy texture, plus, extra sweetness 🙂
I made some caramelized banana as a side for pancake last Saturday. And it popped into my mind , Yasmine’s banoffee pie, because it was amazing! Nothing was wrong with it, it was fantastic. This banana mouse is inspired by a banoffee pie that my talented baker and friend Yasmine made in an event for mom here in Dubai. I swear I wanted to make an easy recipe for the blog, because it seems that I complicate some recipes and people are hesitant to make them.
So I wanted to make a healthier banoffee pie which is an English dessert. Then I happened to make a mousse that is similar to the american one, the southern . However, this mousse is so much healthier for you!
I was thinking of hobnob biscuits or Nilla wafers to mimic the texture of the southern pudding, however, making a crust with oats and almonds are way healthier and also more fulfilling ..
I wasn’t even intending to make it vegan at first, but I have some leftover cashew cream that I don’t want to get to waste. And it happened also that I have other vegan ingredients, which I also advice you to keep at home. Not because they are vegan, but because they are good for YOU! Really healthy like oatmeal, coconut oil, oats, dates, and almonds too.
Cashew cream
Cashew cream is a great healthy substitute for dairy heavy cream. It’s great for enhancing cream soups for texture and flavor too. Also vegan sauces like Alfredo sauce.
This banana mousse is healthy because:
- It has cashew cream that has healthy unstaturated fats.
- It has oat flour and almond flour that are packed with fibers and vitamin B6.
- Also, coconut oil adds good fats for your heart
- And even the crunchy topping is made of toasted almonds and rolled oats!

No Bake Creamy Banana Mini Tarts {Vegan & Gluten free}
Ingredients
- Crust:
- 4 Tb coconut oil
- 6 Tb oat flour
- 10 Tb almond flour
- 1 Tb coconut sugar
- A pinch of salt
- A dash of ground nutmeg
- Filling:
- 200ml of coconut cream* or cashew cream
- 200 g mashed banana
- 100g of pitted dates
- 1 t cinnamon
- A dash of nutmeg /optional
- Topping:
- Toasted oatmeal, coconut, and almonds.
- Vegan buttercream**
Instructions
- In a food processor, mix dry ingredients of the crust. Then add coconut oil gradually until its firm dough but bit very wet or soft. (You can add 1 Tb of water or real maple syrup if its.
- Press the dough in a small jar or any glassware, and refrigerate for 2 hr.
- In a high powder blender, mix banana and dates together. if the dates are dry or the blend is dry, add 1 or 2 Tb of non dairy milk.
- Now whip cashew or coconut cream with date/banana mix. Add cinnamon and nutmeg too.
- pour the cream over the cold dough, and chill overnight.
- Before serving, in a small pan, heat coconut oil on a medium heat, then add rolled oats or old fashioned oatmeal and grated coconut or coconut flakes , and sliced almonds.
- Keep stirring for five minutes or until the color turned into ,light golden color.
- Sprinkle over chilled banana pudding and enjoy!
