How’s summer going for you? In July, we travelled to turkey. We did it before, it was amazing, I posted a recap, and this year was even BETTER. The main reason was to meet some of my family members, also to participate in a trial race, in Uludağ mountain in Bursa, Turkey. I only ran 6km, and I wished that I have done more. It wasn’t easy to run, as the highest elevation was about 1800 , you can check more about it here, maybe you would consider participating next year!
It was so hard to come back to work after vacation , it was a long one, around three weeks, with lots of sight seeing, historical places shopping, and sipping lots of Turkish coffee and tea in in Istanbul and even running rounds.
And while I’m getting beck slowly to work (I run small business now). I’m not into he mood for heaving cooking in Dubai summer heat, and after long days of non cooking. Therefore, I opt for an easy recipes, healthy and refreshing and mostly easy so you can enjoy! Because I’m sure you much have a busy summer! And if it wasn’t, its a refreshing popsicle that surely would draw a smile on your face.
Rainbow Popsicles
This recipe is so fun and easy that you can make with your kids in the summer break. It is highly customizable, I choose these fruits because they are easily available here, and has nice colors and family favorites. I always recommend to use local and seasonal ones. Unfortunately, here we hardly have any local fruits, beside some melons . But you can use fresh berries , peach or any seasonal one. These rainbow popsicles are vegan for a lighter version of traditional ice cream.
Suggested add-ons:
You can easily add herbs (dried or fresh) like basil leaves, thyme, and mint. And spices, and other condiments like : shredded coconut, ground ginger, ground cinnamon, and chia seeds.
Why these rainbow popsicles are healthy

- It lowers cholesterol too. This study found that, the more strawberries you eat, the more antioxidants your body absorb.
- It has kiwi that has more than your daily need of vitamin C , that is very important for tissue growth and repair too. Also it has small amounts of vitamin K and vitamin and According to this study, 1 kiwi fruit/week is associated with higher HDL (good cholesterol) value, and lower triglycerides values in people who are not suffered from cardiovascular diseases.
- It has pineapple that has high amount of vitamin c, fibers, potassium, and manganese, helps with digestion due to high fiber content and water content too.
- They are low in sugar and calories compared to the store-bought ones.
Click here for the exact model I used, it’s cheap and easy to use. You can use the yellow stick or ad ice cream stick. when you want to serve it, add the mold under running hot water carefully an for few seconds, then gently remove the popsicles, you may need to put it under water, again, and then put it over ice so you can have more time before it melts.
