Lemon Blueberry Popsicles with Chia Seeds
Ingredients
- Blueberry Layer:
- 100g or 1/2 cup fresh or frozen blueberries
- 2 tablespoons real maple syrup
- 1/4 cup or 60ml water or coconut water
- lemon Layer:
- 60 ml fresh lemon juice
- 2 tablespoons real maple syrup
- 60ml water or coconut water (optional, depending on how light you want it)
- Chia Seed Layer:
- 2 tablespoons/30g of chia seeds
- 90ml water or coconut water ( plant-based milk for milky version)
- 1 teaspoon real maple syrup (optional)
Instructions
Make the Blueberry Layer:
- Blend blueberries, maple syrup, and water until smooth.
- Pour the mixture into popsicle molds, filling them about one-third of the way.
- Freeze for 30–45 minutes until firm.
Prepare the Chia Seed Layer:
- In a small saucepan, combine chia seeds and plant-based milk. Cook over low heat, stirring constantly, for 5–7 minutes until it thickens.
- Add maple syrup if you'd like a touch of sweetness.
- Let the chia mixture cool to room temperature.
- Once the blueberry layer is frozen, add a thin layer of the chia mixture to the molds. Freeze again for 30 minutes or until firm.
Create the Lemon Layer:
- Mix fresh lemon juice, maple syrup, and coconut milk until well combined.
- Pour the lemon mixture over the frozen chia seed layer, filling the molds to the top.
- Insert popsicle sticks and freeze for 4–6 hours or until completely set.
Unmold and Serve: Run the molds under warm water for a few seconds to easily release the popsicles. Enjoy immediately!
