My name is EA {short for Edith Ann :-)} and I am a registered dietitian nutritionist living and working in my hometown of sunny San Diego.
Before I share my Oatmeal Chia Berry Crisp recipe, I would love to tell you a little bit more about myself, and about my nutrition philosophy…
Although I personally follow a gluten-free diet {which has eliminated almost all of my symptoms from Sjogren’s Syndrome, an autoimmune condition}, I strongly believe that there is no one best diet for everyone. So you will find a variety of gluten-free recipes {including vegan, vegetarian, Mediterranean, low FODMAP, grain-free and more} on my healthy, seasonal recipe blog, The Spicy RD.
I have my own private nutrition practice, Spicy RD Nutrition, and in addition to wellness nutrition and weight management, I work with clients who have celiac disease or non-celiac gluten-sensitivity, IBS and other GI disorders, autoimmune conditions, fibromyalgia, and more to find the diet and foods that help them feel their best. I truly love my job, and feel so rewarded when I am able to help people recover from a chronic condition they have struggled with for so long!
Outside of work, I am happily married to my husband of 15 years, “Mr. Spicy” and am a mom to two fabulous kiddos {as fabulous as a tween and teen can be!} “SiSi”, 13, and “Big Tex”, 12. My other passions and hobbies include hiking, tennis, fitness in general, travel, photography, and interior design. Oh, and one day, maybe, just maybe, I’ll be living on my own goat farm
Now on to the chia berry crisp recipe…
I chose this recipe for Oatmeal Chia Berry Crisp to share on Nutrizonia, because I know how much Farida loves desserts! Also, it features summer sweet berries, and although it is absolutely delicious, it’s actually pretty nutritious too, with strawberries, blueberries, chia seeds, and gluten-free oats. Oatmeal Chia Berry Crisp {gluten-free, vegan}
Ingredients
- 2 cups sliced strawberries
- 2 cups blueberries
- Juice from 1/2 Meyer lemon
- 2 tablespoons chia seeds
- 1 tablespoon maple syrup, optional for a little additional sweetness
- 1/2 cup gluten-free oats {regular oats are fine if not on a gluten-free diet}
- Flour blend: 1/4 cup sorghum flour plus 1/4 cup tapioca starch {use 1/2 cup all-purpose flour if not on a gluten-free or wheat free diet}
- 1/4 cup brown sugar
- 1/4 cup virgin coconut oil, melted, plus extra for ramekins
- 1/8 teaspoon salt
Instructions
- Preheat oven to 350 degrees.
- Stir together strawberries, blueberries, lemon juice, and chia seeds in a mixing bowl.
- In another bowl, stir together oats, flours, brown sugar, coconut oil, and salt.
- Grease 4 ramekins {or custard cups} with coconut oil, then spoon fruit mixture in to ramekins and top with oatmeal/flour mixture. Place on a baking sheet in oven, and bake for approximately 20 minutes, or until topping is crispy.
- Remove from oven to cool slightly, and then serve.
