In the first post of this series, I explained why I’m testing recipes. Today the tested recipes are healthy treats, and not your usual pancakes recipe.

They are all breakfast items, that I love, and I know most readers love them, so it’s health-fying typical of these usual breakfast dishes.
Masala Chai Tea Scones with Vanilla Glaze by Kara
From a while, these scones were on my to do list. And after my 1st successful attempt for strawberry scones, I’ve decided to test another one, a healthier version. And here I am, I thought I should give these aromatic scones a try.
I’ve been following Kara for a while now, she has a great collection of delicious healthy recipes, with ingredients that you can easily get/find, and more important “real”.
She follows a holistic approach, when it comes to health for herself, and her clients. She focuses on mind, and body together, and not counting calories. I love her mindful posts on Mondays, such a relaxing way to start off your week!
What would I change/did:
- I added maple syrup instead of agave nectar, which was a mistake. It did slightly overcome the flavor of Chai. Next time I would add white sugar.
- I may substitute half the amount of whole wheat flour, with all purpose one.
- I did adapt this recipe to have Chai, since I don’t have “ready to use” Chai leaves
- I think the vanilla glaze is a must, and a better flavor combination than maple syrup. But I always try not to keep confectioner’s sugar at home.
Would I make it again? Yes, definitely!

Savory pancakes with a fried egg and spinach by Alice
These were amazing! Since I really starting having pancakes regularly, I do add cheese to one of my pancakes ,and heat it in the microwave. It tastes so good! So now after I know of the trend of savory pancakes, and after I saw this recipe in foodgawker . I couldn’t resist it!
It is the definition of perfect pancakes! They are fluffy, and light. And guess what? No sugar, Yay! It is a perfectly measured recipe.
I’m new to Mitzy blog, but I start following it. She has a great photography style, and creative recipes.
What would I change/did:
- I added mushrooms, since I don’t have sun dried tomato (I never did). Mushrooms added a meaty flavor without extra salt, like in the case of dried tomatoes.
- I would add a dressing to my greens, or better than that, I will mix them with the batter of pancakes.
- After I took photos, I did cook the egg a little more.
Would I make it again? Defiantly, yes! And I highly recommend them!

Strawberry Vanilla Yogurt Muffins by Erin
Again and again, I said I’m not into healthy treats. I do eat healthy, but treats should be made with butter/oil, egg, and milk. I don’t like substitutions a lot, the ingredients are been there for a reason.
But, I’m afraid I’m gonna change my mind. Do you see the scones up in this post? My son had most of what I baked. They are healthy, delicious, and low in sugar. And almost a finger food (he was happy to eat them with no added maple syrup, or glaze, extra bonus!).
Back to the muffins, I knew yogurt in cake/muffins will make them fluffier. And as I said before, I’ve become a crazy strawberry lover, so these were a must try. And allover I love Erin’s taste in desserts, and actually all her recipes. So why did I wait?.
I stumbled upon Erin’s blog ,when I was looking for cooking/baking tips. and I did include one of her posts in my favorite links. After that, I realized that she changed the name of the blog, I was confused, I wasn’t sure if it is the same blog. But then just yesterday, I read that the blog graduated, just like Erin’s husband!
I lover her little stories. she has a natural voice in writing. It makes you feel like a friend, and you are welcome in her house.
These muffins are so good, moist, fluffy, with great flavor! And not so sweet, or buttery!
What would I change/did:
- I did use whole milk. I don’t use non-dairy milk, unless I want the flavor of it, like coconut milk in desserts.
- I don’t have vanilla paste, I just added vanilla powder.
Would I make it again? A big yes!
I know my son would go crazy to eat them! And I’m just eating them, while I’m writing this post!
